Synopsis

Kombu, dulse, wakame: seaweeds are a growing success, and their diversity constantly surprises gastronomes. Whether they're sought after for their nutritional properties, iodized flavors, or aesthetic appeal, they're set to conquer the world.

We're going on a journey in the footsteps of these exceptional seaweeds. It will take us from the far north of Japan, where fishermen seek nothing but excellence, to South Korea, where we'll discover a seaweed so fine and fragile that it looks like lace. Finally, we'll head to Brittany in France, where spectacular tidal coefficients favor the appearance of seaweed that the region's chefs highly prize.
